Hamburger Soup

Someone posted this recipe on Instagram so I thought I'd try it.  On my first attempt, it was a huge batch and way too much pasta (it called for a whole 16 oz box).  It basically soaked up all the juice and it really wasn't soup but more like a goulash.  I also improvised on some of the seasonings and added some green beans (other recipes called for other veggies like corn.  I cut the recipe in half and it was much better amount for the three of us.  The flavor is really good.  I know this isn't really the time of year for soup, but it sounded really good to me.  I've been taking for lunch all week.

Hamburger Soup

·         1 cup of macaroni
·         1 lb 93/7 ground beef
·         ½ tsp pepper
·         ½ tsp seasoned salt
·         ½ tsp minced garlic
·         ¼ tsp oregano
·         ¼ tsp basil
·         ¼ tsp Italian seasoning
·         1 envelope onion soup mix
·         1 cans cut green beans
·         1 cans petite diced tomatoes
·         1 – 8oz can tomato sauce
·         1 – 32oz box of unsalted beef stock
·         1 Tbsp worcestershire sauce
·         ¼ cup grated parmesan cheese (optional)

Add ground beef in skillet and season with minced garlic, seasoned salt, pepper.  Cook on medium-high heat and drain excess grease.  Transfer to crock pot.  Add remaining seasonings, tomato sauce, diced tomatoes, beef stock, Worcestershire sauce and green beans.  Cover crock pot and cook on low for 6 hours.  About 30 minutes before it is done, cook macaroni in boiling water, following package directions and drain well.  Add cooked macaroni to crock pot and cook for 10 minutes longer.  Top with parmesan cheese if desired.
